Satisfy your KFC craving - GUILT FREE!

Sometimes it is impossible to ignore those junk food cravings. Whether it be hormones, recovering from a big night of drinking or eating your feelings, sometimes if feels like nothing will fix your problems except KFC. Recently I was suffering from all 3 of these leading causes of binging and decided that I was going to make my own healthier version of KFC - and the result was AMAZING!!

Lazy Girl A's Special KFC Recipe 

Ingredients
  • 1& ½  cups wholemeal spelt flour (found in Coles)
  • 1 chicken breast (chopped into small chunks)
  • 2-3 tablespoons of Masterfoods All Purpose Seasoning – Spicy
  • 1 egg (maybe 2, depends how much chicken you have)
  • Pepper (don’t add salt as the Masterfoods All Purpose Seasoning is salty)
  • Spray olive oil
  • Sesame seeds or 1 weet-bix (crushed) or quinoa flakes (found in Coles)
  • Sweet chilli sauce for dipping (optional)

Method
  1. Pre-heat oven 180 degrees.
  2. Spray oven tray with olive oil.
  3. Dice chicken breast into nugget size chunks.
  4. In one bowl put ½ cup spelt flour; in the second bowl put in the egg and whisk it; and in the third bowl put remaining spelt flour, Masterfoods All Purpose Seasoning-Spicy, pepper and sesame seeds or 1 weet-bix or quinoa flakes (or maybe even a combination of all 3).
  5. One chunk at a time, coat the chicken in the spelt flour, then the egg wash and finally the spice mix.
  6. Place coated chicken onto prepared oven tray and spray with more oil.
  7. Cook for approximately 20 – 30 minutes (depending on your oven). Flip/stir the chicken halfway through cooking.
  8. Serve with sweet chilli sauce for dipping.

I've shared this recipe with a few of my Lazy Girl friends and they love it too! Serve it with some home made sweet potato chips and you have a whole guilt free KFC meal. Remember though, it is still a treat meal - so save it for those junk food emergencies!
